Apple Sweet Potato Kale Salad Walnut Date Balsamic Dressing

Apple & Sweet Potato Kale Salad + Walnut Date Balsamic Dressing

  • Serves: 5 servings

Ingredients

  • for salad:
  • 1 sweet potato, diced
  • 2 1/2 tablespoons olive oil
  • 1/2 tablespoon dried rosemary
  • 1/2 teaspoon chipotle chile powder
  • 10 ounce bag of pre-washed, pre-chopped kale
  • 1 small apple, thinly sliced
  • 1/2 small onion, thinly sliced
  • 1/3 cup chopped walnuts
  • for dressing:
  • 1/3 cup chopped walnuts
  • 1/2 cup water
  • 5 pitted Medjool dates
  • 2 tablespoons HEB 2 LEAF balsamic vinegar
  • 1/2 tablespoon olive oil

Instructions

  1. Preheat your oven to 375 degrees and coat a baking sheet with olive oil
  2. Toss your diced sweet potatoes with 1/2 tablespoon olive oil, rosemary, and chile powder
  3. Roast the sweet potatoes for 10-20 minutes, flipping halfway
  4. While the sweet potatoes are cooking, massage the kale with 2 tablespoons of olive oil in a large salad bowl, until the leaves are tender
  5. Top the kale with the sliced apple, sliced onion, and walnuts
  6. Once the sweet potatoes have cooled, place them atop the salad
  7. Using an immersion blender (or any other blending tool), blend together all of the dressing ingredients until smooth
  8. Drizzle over the salad and serve
