Apple & Sweet Potato Kale Salad + Walnut Date Balsamic Dressing

Ingredients
- for salad:
- 1 sweet potato, diced
- 2 1/2 tablespoons olive oil
- 1/2 tablespoon dried rosemary
- 1/2 teaspoon chipotle chile powder
- 10 ounce bag of pre-washed, pre-chopped kale
- 1 small apple, thinly sliced
- 1/2 small onion, thinly sliced
- 1/3 cup chopped walnuts
- for dressing:
- 1/3 cup chopped walnuts
- 1/2 cup water
- 5 pitted Medjool dates
- 2 tablespoons HEB 2 LEAF balsamic vinegar
- 1/2 tablespoon olive oil
Instructions
- Preheat your oven to 375 degrees and coat a baking sheet with olive oil
- Toss your diced sweet potatoes with 1/2 tablespoon olive oil, rosemary, and chile powder
- Roast the sweet potatoes for 10-20 minutes, flipping halfway
- While the sweet potatoes are cooking, massage the kale with 2 tablespoons of olive oil in a large salad bowl, until the leaves are tender
- Top the kale with the sliced apple, sliced onion, and walnuts
- Once the sweet potatoes have cooled, place them atop the salad
- Using an immersion blender (or any other blending tool), blend together all of the dressing ingredients until smooth
- Drizzle over the salad and serve
